Cape Mentelle Cabernet Sauvignon is sourced from the winery's Wallcliffe vineyards and select Margaret River growers. It is primarily Cabernet Sauvignon with Petit Verdot and a small portion of Merlot.

The Wallcliffe vineyards have gravelly, lateritic soils and their microclimate is strongly influenced by the nearby Indian Ocean. The fruit is destemmed and lightly crushed before individual batches ferment on skins.

Each batch is gently basket pressed to new and seasoned Bordeaux coopered oak barrels for malolactic fermentation. Maturation takes place over 18 months. The wine is bottled unfined and unfiltered.

Deep crimson, Cape Mentelle Cabernet Sauvignon has vibrant dark fruit flavours, dense yet refined velvety tannins and a lingering, supple finish.

An outstanding Margaret River Cabernet. Cellaring potential is 15 years.
